The excitement for the season of fresh peaches is upon us and oatmeal is still a boring topic for many despites it’s awesome fiber content, fun chewy texture and feel good factor after you eat it.
A nice Costco find was this organic oatmeal as well. A big bag of rolled oat love. Check it out, who doesn’t love a caring farmer.

I love this because it’s easy and while I make my tea or coffee in the morning I bring the oats to boil and shut off. Then I go about my morning chores and come back to finish and eat it in about two minutes. It’s a quick treat for sure.
To elevate the experience a little freshly ground nutmeg if you have it. Nutmeg and peaches goes together like a horse and carriage protest in NYC (don’t ride those you know, it’s cruel), or I also love Burlap & Barrel Cinnamon Crunch to sprinkle on top as it contains both cinnamon and cardamom and that’s another pairing in the spice world not to be missed.

Peachy Creamy Oatmeal
Serves 1 ~ Prep Time: 2 minutes ~ Cook Time: 12 minutes ~ Total Time: 14 minutes

Put the oats and 3/4 cup of the water in a sauce pan.Bring to boil and shut off heat.

Go do your morning chores. 🙂

Return to stove and add 1/4 cup of the water.

Chop the peachand mix in witht the oats. Bring to simmer and stir in peaches for about 1 minute and then mix in condensed coconut milk.

Place in serving bowl.

Grate a little fresh nutmeg on top.
